The Vintner is our limited edition wine process Arabica from the Gayo Highlands. The coffee ferments for 96 hours in sealed stainless tanks under controlled carbon dioxide — a technique borrowed from the Beaujolais wine tradition.

Wine process — also known as carbonic maceration — is an experimental coffee processing method where whole cherries are sealed in stainless tanks under controlled carbon dioxide for extended fermentation. The technique borrows from the Beaujolais wine tradition and produces coffees with pronounced fruited and wine-like character. The Vintner ferments for 96 hours.
Both come from the Gayo Highlands but they are very different cups. Our Kopi Luwak has a velvety body with low acidity and notes of dark cocoa, caramel, and gentle spice — a daily luxury. The Vintner is brighter and more fruit-forward, with red wine, dark cherry, and cocoa nib notes.
The Vintner is best suited to drinkers who enjoy bright, complex, fruited coffees (Ethiopian naturals, experimental lots). If your daily cup is smooth and low-acid, our Kopi Luwak is a better match.
The Vintner is the result of a single 2026 fermentation batch. We produced 200 numbered bags. Each bag carries the producer's signature and its number in the edition. When this batch is allocated, it is gone. We have not yet committed to a second batch — wine process at this quality is laborious and we approach each release on its own terms.
Kopi Luwak is widely regarded as the rarest and most exclusive coffee in the world. It is produced through a remarkable natural process involving the Asian palm civet (Paradoxurus hermaphroditus), a small nocturnal mammal native to Southeast Asia. Wild civets instinctively select and consume only the ripest, highest-quality Arabica coffee cherries. During digestion, naturally occurring enzymes ferment the beans, breaking down the proteins responsible for bitterness. The result is a coffee of extraordinary smoothness, complexity, and depth — with characteristics that cannot be replicated through any artificial process.
Gayo Wild is distinguished by three principles: provenance, ethics, and quality. Our coffee is sourced exclusively from the Gayo Highlands of Central Aceh, Sumatra — one of the world's premier Arabica-growing regions, at elevations above 1,200 metres. Unlike many Kopi Luwak producers who rely on caged or captive civets, every Gayo Wild bean is collected from wild, free-roaming animals in their natural forest habitat. We work directly with experienced local farmers, and each batch is hand-sorted, hand-roasted in small batches the traditional Gayo way, and packed and sealed at the farms by the farmers themselves.

Every bag is hand-gathered at the jungle’s edge, hand-sorted bean by bean, hand-roasted in small batches using traditional Gayo methods, then weighed, filled and sealed at the farms in a one-way CO₂ valve pouch — by the same hands that grew the coffee. From there it travels direct: farm to London to your door.
Because each bag is finished by hand rather than by machine, it may carry the small signatures of that journey — we consider them proof that no factory ever touched your coffee.
Ethical sourcing is the foundation of our brand, not an afterthought. Gayo Wild operates exclusively with wild, free-roaming civets — we have a zero-tolerance policy on caged or captive animal sourcing. Our partner farmers in the Gayo Highlands are fairly compensated for the labour-intensive process of hand-collecting beans from the forest floor. To experience the full complexity of Gayo Wild Kopi Luwak, we recommend manual brewing methods such as pour-over (V60 or Chemex) or French press. Use freshly ground beans with water between 90–94°C and a coffee-to-water ratio of approximately 1:16. We recommend enjoying the coffee without milk or sugar for your first cup. Store your Gayo Wild coffee in a cool, dark, dry place — ideally between 15–25°C. Keep the beans in the original resealable pouch, which features a one-way degassing valve designed to release CO₂ while preventing oxygen from entering. Consume within four weeks of opening. Avoid refrigeration as moisture can compromise the delicate flavour compounds. Grind immediately before brewing.
The price of genuine wild Kopi Luwak reflects its true rarity. Unlike conventional coffee, production cannot be scaled — each bean must be naturally selected by wild civets and individually collected by hand from the forest floor. Global production of authentic wild Kopi Luwak is estimated at fewer than 500 kilograms per year. The meticulous hand-sorting, small-batch roasting, and our commitment to fair farmer compensation all contribute to the premium.
